About Us:

Mayfair’s Hamiltons Gallery owner Tim Jefferies and Chef Larry Jayasekara open The Cocochine, restoring, renovating and reimagining the historic property in Bruton Place. 

Located in a former mews house at 27 Bruton Place off London’s Berkeley Square, Tim and Larry have approached the property as custodians, preserving and enhancing the 4-story building to house their new restaurant, The Cocochine. 

Named after an affectionate term for Tim’s young daughter, The Cocochine is set over four floors where the detail and precision of the interior have been thoughtfully considered around the guest experience. Menus will be fully à la carte in the main dining room, with exclusive table use (no turning of tables) at both lunch and dinner.


Responsibilities:


  • Culinary Expertise:
  • Collaborate with the Head Chef to execute creative and high-quality menu offerings.
  • Ensure consistency in flavor, presentation, and adherence to established recipes.
  • Contribute to menu development and the introduction of seasonal specials.
  • Kitchen Operations:
  • Oversee day-to-day kitchen operations, including food preparation, cooking, and plating.
  • Manage inventory, ordering, and kitchen hygiene to meet health and safety standards.
  • Support the Head Chef in maintaining a smooth and efficient kitchen workflow.
  • Team Collaboration:
  • Work closely with kitchen staff to provide guidance and support in executing culinary tasks.
  • Foster a positive and collaborative atmosphere within the kitchen team.
  • Assist in training and development of kitchen staff members.
  • Quality Assurance:
  • Conduct regular quality checks to ensure the highest standards are met.
  • Address any issues or concerns related to food quality and presentation promptly.
  • Guest Satisfaction:
  • Collaborate with front-of-house staff to ensure a seamless dining experience for guests.


Qualifications:

  • Proven experience as a Chef in a high-end restaurant or upscale dining establishment.
  • Culinary degree or equivalent certification is appreciated but not compulsory.
  • Proficient knowledge of various cuisines, cooking techniques, and food presentation.
  • Strong organizational and multitasking abilities.
  • Effective communication and leadership skills.
  • Adaptability and composure in a fast-paced kitchen environment.
