Job Description

Manpower Recruitment has an exciting position in an established University, for someone looking to take the next step in a busy kitchen environment as a Junior Chef De Partie.


The role is a Full-Time, Permanent role, working 5/7 days, including weekends, mornings and evenings working 40hrs per week.

Salary will be £26957.


The ideal Candidate works in a busy kitchen and eager to learn, grow and develop within the role, in a university environment.


The post holder will be part of a busy team that fulfils the diverse catering requirements of a large College. They will be responsible for the preparation of a wide range of foods, consisting of breakfast and vegetable preparation and to produce food in the other areas of the kitchen. Assist Duty Chefs to ensure that all meals are produced in a timely manner and that the quality of presentation and production are of the highest standards. They will also be responsible for following the highest standards of hygiene and safety throughout. On occasions, the post holder will be required to work on their own as the Duty Chef, and during these times they will be responsible for all aspects of food production and presentation, security, hygiene, and health and safety within the Kitchen.


Main Duties

Food production/ service Breakfast

· To use the Hall menu to prepare Hall breakfasts. To top-up food rather than cook everything at once, thus preventing over production and giving a fresher product.

· To prepare sufficient food for staff breakfast at 8:45am.

· To prepare conference breakfasts in accordance with daily menu, including any special dietary requests. Vegetable Section

· To prepare and cook fresh vegetables, as required from the daily menus.

· To prepare salads as required from the daily menus.

· To assist Duty Chefs with all aspects of lunch/dinner service and to ensure that food is served at the correct time.

· To ensure that the quality of food presentation and production are of the highest standards. Sauce, Larder, Pastry, Diet Section

· To assist in these areas where necessary.

· To complete work from the communal lists when own work is complete.

· To assist the Kitchen Porters with all aspects of maintaining a safe, clean, and hygienic Kitchen, correct storage of food stocks and equipment, cleaning spillages, and disposing of rubbish in a timely fashion.

· To ensure that waste is disposed of in the appropriate manner, and recycling in the correct place.

· To work in such a way as to ensure that the highest standards of food hygiene are always adhered to, and to work in such a way that all relevant health and safety legislation is complied with.

· To undertake such other duties, consistent with the purpose of the job, as may from time to time be assigned by the Head Chef or their nominee.


Allergies:

• To be aware of and follow the College’s allergy systems and procedures.

• To be able to answer customer queries on allergies correctly.

• To understand the importance of serving safe food to people with allergies and the need for this food to be of the same standard as the regular food.


Leave Entitlement:

In addition to public holidays, this appointment carries with it a leave entitlement of 25 days. 5 days of the entitlement are to be taken during the College’s Christmas closure period and 5 days during the Easter closure.
